Description

Ayant fait l’objet d’un élevage de 12 mois en fût de chêne après trois semaines de fermentation traditionnelle. Belle couleur pourpre avec des reflets violines. Le premier nez est intense ce qui lui confère un caractère un peu sauvage où l’on retrouve des notes de sous-bois, de fruits noirs, avec des nuances vanillées et torréfiées. Chaleureux en bouche, il présente des tanins légèrement boisés, prêts à se fondre et qui président d’une bonne garde.

Plats conseillés

Gibiers sauvages, civet de lièvre, plats en sauce tel que la daube provençale, fromage à fort caractère.

A boire à température de 18 C, de préférence faire décanter une heure avant de servir.
